A monthly ritual during the summer. I hit the farmers market and buy several loaves of sourdough bread. I bring them home and slice them up, put in freezer bags, then put in the freezer. New recipe.. Pesto White Bean Dip/Dressing. Super simple if made with your favorite premade pesto. I used Trader Joe’s Vegan Kale,Cashew,Basil Pesto. 8 ounces pesto 1 can drained and rinsed cannellini beans 1 large clove of garlic or the equivalent The juice from 1-2 lemons Sea salt to taste. Blend until smooth- taste and adjust seasoning. You could also add some water if you want to use as a salad dressing rather than a dip. You may need to add more garlic, salt, and lemon. I used my Vitamix blender- it is the best blender out there for making the smoothest sauces, dips, smoothies and it can do so much more. The juice from 1-2 lemons
Sea salt to taste.

Blend until smooth- taste and adjust seasoning. You could also add some water if you want to use as a salad dressing rather than a dip. You may need to add more garlic, salt, and lemon.
I used my Vitamix blender- it is the best blender out there for making the smoothest sauces, dips, smoothies and it can do so much more. If you do not have one in your healthy kitchen- get one now!

Join me in the kitchen as I whip up one of my favorite lunches- mock tuna on sourdough bread. 1 can of chickpeas 1 dill pickle 1/4-1/3 onion About 1/4-1/3 cup vegan mayonnaise 1-2 tbsp of mustard Salt and pepper to taste. You could also add in some kelp seasoning for a more fishy taste. Chop everything up, mix in mayo & mustard, season to taste.
