This recipe needs magic mushroom powder. If you haven’t used this powder before- you’re welcome! You can buy it premade at Whole Foods are you can make it yourself using this recipe. This powder is awesome in soups, on tofu, in stir fry, and in dressings.
My 14 year old hates ranch dressing, anything that is creamy, made with mayo or sour cream replacements or the real thing back when we were not vegan. He loves this salad dressing and asks for salad every night now.
Ingredients:
1 cup of raw cashews soaked overnight
¾ – 1 cup of water
1 tbsp raw agave nectar or 1 pitted medjool date
the juice of a large lemon
2 tsp lemon zest
1-2 tbsp minced garlic
3 tbsp of nutritional yeast
1 tbsp apple cider vinegar
1 tsp dijon mustard
1 tsp salt and pepper
1 tsp dried parsley
1 tsp dried dill
3/4 tsp magic mushroom powder
1 tbsp olive oil
Blend the raw cashews that have been soaked with all of the rest of the ingredients. You may need to add more water (if too thick) lemon juice (if needs more tart). Adjust salt, pepper and garlic to your tastes.
