Forget those sugary filled Starbucks pumpkin spice latte’s! These overnight oats are delicious, filling, and full of fiber- 15 grams to be exact. This is the perfect post workout meal! Add some pumpkin seeds for some protein- or use hemp milk as your milk of choice!
Ingredients:
2 cups of old fashioned oats
8 tbsp of chia seeds
1 can of pumpkin puree
2 tsp of pumpkin pie spice
4 tbsp of maple syrup
plant based milk of choice
You will need 4 pint sized mason jars.
Directions:
The ingredients are split between the 4 jars. A 1/2 cup of oats, 2 tbsp of chia seeds, 1/4 cup of pumpkin puree (it may be a little more than 1/4 cup- you are just splitting the can between 4 jars), 1/2 tsp of pumpkin pie spice, 1 tbsp of maple syrup. Top with plant milk of your choice- fill to the top. Put a lid on the jar and shake!Put it into the refrigerator for at least 2 hours before eating. I usually make on Sunday to set myself up for the week.
