Watermelon is Summer’s gift to us. Juicy, sweet and refreshing on a hot summer day. I love watermelon, but wouldn’t it be nice to have it be less messy and easier to consume (like our awesome green smoothies)? Also, what happens when you have a less sweet watermelon? It happens, and who wants to waste it? I created my watermelon slushy because of all of these reasons. I had a less than sweet watermelon, didn’t want to be cleaning up watermelon drippings from the kiddos, and wanted the ease of a smoothie.

This slushy is delicious and refreshing. Note that if you have a perfectly sweet watermelon you can leave the apple out- I only add it to add sweetness if my watermelon is not so sweet.

Ingredients:

1/4-1/3 of a large watermelon cut into chunks
1 large apple (if your melon is sweet enough) cored and roughly chopped in large pieces
1 large lemon (peel intact) cut into quarters

Put your apple pieces, lemon, and half your watermelon into blender. Blend until smooth. Add more watermelon and keep blending- until you can’t add more watermelon. I just add through the whole on the lid of my blender. You can add a handful of ice if you would like it extra cold.
